Katy Reany
Feeling Right at Home
The Harvest Moon has recently hired a new manager who comes to us from Kroger. We feel very fortunate and excited to have her as a member of our little Harvest Moon Family. Katy has lived in Floyd since she was 3 years old and was at a place in life where she wanted to work close to home and interact on a deeper level with HER community. We are all the lucky winners in Floyd!
Katy is primarily responsible for purchasing the Moon’s grocery, pet and beer products. If you ever need to special order one of these items, Katy is your lady. If you’d like to see us carry a new product in one of these departments, Katy is your lady. Honestly, she can help you with just about any question or request you may have. And she’s happy to do so.

Katy is a woman of many colors. She loves to read, write, craft and bake. When Happy? Bake cookies! When Sad? Bake a cake! When Angry? Bake, bake, and bake just about anything! You get the idea. She also crochets, knits, makes jewelry, and is an amateur photographer specializing in micro photography. Some of her work has been included in this article. Aren’t they lovely? I love the way the ice formed around the little knobs of the plant! Beautiful! We look forward to seeing some of her work in the future.

In addition to her job and all of her extracurricular activities, Katy is also in the process of going back to school to complete her Associates in Marketing with a specialization in Small Business. She is definitely a busy lady!

When interviewing Katy, I learned that she has an interest in both Anime (a Japanese form of animation) and Manga (a Japanese form of printed comic books). I had never heard of Manga, so of course I did some perusing on the internet. The pictures included in the article give you an ideal of the artistic style. You can also take a look at Sailor Moon, Juliet x Juliet, Fruits Baskets to get a better idea of these artistic genres.

When asked what food she would choose to eat every day for the rest of her life, Katy’s answer was ‘hippy popcorn’. It sounds delicious: popcorn, butter, salt, nutritional yeast and soy sauce. Mmmmm!
Next time you’re in the Harvest Moon, take a minute to say hello to Katy. She loves people, talking with people and helping them (and you!) find just the right item. Katy is one of those people who quickly makes you feel ‘right at home’.

Love Your Community
Plenty! is Neighbors Helping Neighbors
At the Harvest Moon, we love eating good food, and we love sharing good food. So do all of our customers. Since 2015, we have kept a donation jar at the register for Plenty!, Floyd County’s local food bank and farm.
Customers and employees drop in a few pennies when they can.
With these funds, we have purchased hundreds of pounds of food for Plenty! But the food wasn’t really for Plenty!, it was for our friends, our neighbors and our fellow families in Floyd.
In the last quarter of 2018, Harvest Moon Customers donated $101.41 to the Plenty! jar. With those funds, we purchased and donated in their name:

Thank you to everyone who helped make this possible. A small donation when added with many other small donations really can make a difference.
In 2019, the Harvest Moon hopes to ‘share the love’ even more with our community. Beginning January 1st, the Harvest Moon is matching dollar for dollar, quarter for quarter, and penny for penny all that is donated in the Plenty! jar.
So please give when you can. Together we will double our donations in the hopes of helping those in need—–somewhere we have all been at least once in our lives.

Nourish the Body with Healthy and Tasty Food
GINGER ROASTED PUMPKIN-QUINOA SALAD
Ingredients
2 lb. pumpkin (or other squash you adore)
1 tablespoon finely grated fresh ginger
2 green or red chilies, finely chopped
2 cloves garlic, finely chopped
2 tablespoons olive oil
2 teaspoons pure maple syrup
a handful of finely chopped coriander (cilantro) roots and stems, optional
Fine sea salt and freshly ground black pepper
1 cup (185g) quinoa
1 1/2 cups (375ml) water (or veggie or chicken broth if desired)
The juice of two limes (or large lemon)
a good handful each of fresh mint and coriander (cilantro) leaves
toasted pumpkin (pepita) seeds
Directions
Pre-heat oven to 400F. Peel pumpkin, remove the seeds and cut into even chunks approximately 2-3cm wide. Combine pumpkin with ginger, chili, garlic, olive oil, maple and coriander roots and season well with salt and pepper. Combine well before turning out onto a large oven tray. Bake for 25-30 minutes, turning once or twice or until the pumpkin is lovely a golden and soft right through. Remove from the oven and set aside to cool slightly.
Meanwhile rinse quinoa well. Bring the water to the boil in a small saucepan before adding the quinoa, covering with a lid and reducing the heat down to a gentle simmer. Cook for 10-12 minutes until the water has been absorbed and the quinoa is tender. Remove from the heat, leave the lid on and set aside to steam for a further 5 minutes before fluffing up with a fork.
When both the pumpkin and quinoa are cooked, combine the two in a large bowl, making sure you scrape any lovely bits of ginger and oil from the bottom of the roasting tray into the bowl too. Squeeze the lime over the mixture, stir through the herbs, season with more salt and pepper if desired and scatter over the pumpkin seeds to serve. You can eat this warm or cool.

I Just Loved How Great These Tasted & How Easy They Were to Make!
Parmesan Crisps
Great with a meal, for a snack, as an appetizer, anytime!
Ingredients
4 ounces grated fresh Parmesan cheese (about 1 cup)
1/2 teaspoon freshly ground black pepper
You can also add other herbs to your creation. Try 1 teaspoon of any of the following: rosemary, thyme, sage, dill, parley, or cilantro.
Directions
Step 1
Preheat oven to 400°.
Step 2
Line a large baking sheet with parchment paper. Spoon cheese by tablespoonfuls 2 inches apart on prepared baking sheet. Spread each mound to a 2-inch diameter. Sprinkle mounds with pepper (and/or herbs). Bake at 400° for 6 to 8 minutes or until crisp and golden. Cool completely on baking sheet. Remove from baking sheet using a thin spatula.
If you’re brave enough to try this: the moment the crisps come out of the oven, while they’re still hot and flexible, try rolling them around the handle of a wooden spoon to form a cylinder. They’re also great looking left in their natural state of flat, irregular ovals.

The Baobab Herb – Something to Consider
My first thought of Baobab is the tree because it is so unique looking. It is also known as the upside-down tree because when bare of leaves, the spreading branches of the Baobab look like roots sticking up into the air, as if it had been planted upside-down. Legend holds that the god Thora took a dislike to the Baobab growing in his garden, so he threw it out over the wall of Paradise on to Earth below, and although the tree landed upside-down it continued to grow.
Recently I have discovered that the Baobab plant is equally famous for its fruit which is also unusual in that it is the only fruit in the world that dries naturally on its branches. It bakes in Africa’s hot sun for 6 months turning its green, prickly, velvet-like coating into a smooth, brown, coconut-like shell. This hard casing needs to be cracked open with a hammer to reveal the completely dry pale pulp of the fruit which has a delicious sweet citrus flavor. Because the pulp is completely dry it has a shelf life of three years without requiring any additives or preservatives.

This pulp is a rich source of vitamin C contributing to normal energy release, immune function, and healthy, glowing skin. These nutrients are more bioavailable originating from a natural fruit source than manufactured vitamin supplements, which means our bodies can absorb the nutrients more easily. Another benefit of vitamin C is its ability to help the body absorb iron. So many forms of iron are not easily absorbed, contributing to an iron deficiency in many people. Increasing our vitamin C consumption through natural sources is one step toward addressing this nutritional disorder.
A single serving of baobab powder (10g or 2-3 teaspoons) provides 33% of your daily vitamin C requirement which helps to keep the immune system strong and contributes to a steady energy release throughout the day. This slow and steady release sustains us for a longer period of time and prevents us from feeling suddenly tired, reducing fatigue as well as supporting a healthy metabolism.

Baobab powder is also a good source of both soluble and insoluble fiber helping to slow down the release of sugars into the blood stream and reducing energy spikes. Soluble fiber can also help to control blood glucose levels, improve blood cholesterol and reduce visceral fat (tummy fat). The soluble fibers of baobab fruit pulp are prebiotics: non-digestible food components that selectively stimulate the growth and activity of beneficial microflora. Consuming more insoluble fiber also helps our digestive health by pushing other foods through to keep your bowels healthy and prevent digestive problems.
Baobab has the highest antioxidant content of any fruit. Baobab powder has twice the antioxidants gram per gram of goji berries and more than blueberries and pomegranates combined. Baobab is packed with antioxidants and vitamin C which supports collagen formation. Collagen prevents wrinkles and gives a radiant glow to your skin, and as a structural protein, collagen is needed for a baby’s normal growth during pregnancy. It plays a vital role in structuring a baby’s body and supporting their developing organs.
Baobab is considered to be one if the highest alkaline foods available helping to balance our body’s pH levels, which can help defend our bodies from chronic diseases and ailments (such as hypertension, arthritis and deficiency in vitamin D).
